Chicken Cordon Bleu Casserole

Casseroles are always a comforting choice during the chilly winter season. The heat of the oven creates a cozy vibe that extends beyond the kitchen and the dish brings a welcome warmth to our tummies.

On the menu today: Chicken Cordon Bleu Casserole!

Did you know traditional Cordon Bleu has international origins? Even though the name itself comes from the French term for “blue ribbon” (a first-place prize and stamp of excellence), the dish was actually made popular in Switzerland! We’re creating it in casserole form to make it simple to prepare and delicious to serve.

Grab an apron and your smallest assistants and let’s get started!

You’ll need the following ingredients:

1 Tbsp. olive oil
1 lb. chicken breast, cubed
½ lb. turkey ham, diced
1 pkg. stuffing, dry
2 to 3 cups frozen broccoli florets, thawed and drained
1 can low-fat cream of chicken soup
½ cup fat-free milk
2 cups mozzarella cheese, shredded
Salt and pepper, to taste

  1. First, preheat your oven to 350 degrees Fahrenheit (325 for a convection oven).
  2. Use the olive oil to sauté your chicken until it’s golden brown.
  3. Next, prepare the stuffing according to your package directions.
  4. Now prepare a baking pan by using non-stick spray or a thin coating of olive oil.
  5. Mix the cooked chicken, turkey, and broccoli together in the pan.
  6. For young assistants: Combine the soup, milk, and cheese (plus, salt and pepper, to taste) in a separate bowl. Pour the mixture over the meat and vegetables and top it with the stuffing.
  7. Bake for 30 minutes or until heated through to 165 degrees.

Our Chicken Cordon Bleu Casserole serves 6 to 8 people and reheats well too. Bon appétit!
